Oatmeal Muffin Recipe
Have you tried the muffin recipe on the Medifast Blueberry Oatmeal box? Works with all versions of oatmeal. I love this for an "on the go" breakfast. In the winter I put the muffins on the seat heater in my car to warm them up.
Yield: Three muffins = one Medifast meal
1 packet Medifast Oatmeal
1/8 t cinnamon
1 packet Splenda sweetener
1/3 - 1/2 C water
1/8 t baking powder
1/2 t vanilla extract
Pam cooking spray
Pre-heat oven to 350 F. Mix together dry ingredients, add extract and water. Stir just until moistened.
Spray Pam into muffin cups. Spoon mixture evenly into three muffin cups. Bake for 12-15 minutes or until golden brown.
Muffins will not rise much, they'll be 1/3 - 1/2 the height of the muffin cup.

Beef & Zucchini Skillet Dinner
Put 5oz lean ground beef in a skillet to start browning it. While it starts to cook, chop 2T onion, dice half a stalk of celery, and mince a clove of fresh garlic and throw it in. Season with black pepper, thyme, parsley, and a bit of oregano. Quarter 2 small zucchinis and slice into bite size pieces; this should be about 1 generous cup. Add to skillet and stir to break up meat. Chop some fresh spinach (a third of a cup packed) and measure out a quarter cup of canned diced tomatoes. Drain the tomatoes. Add the spinach and tomatoes to the skillet and stir. Cover and cook until zucchini is soft. Season with pepper & sea salt to taste. Makes 1 Lean & Green serving, which is really large!

Tom's Story
Two years ago, I weighed 212 lbs and stood 5' 11" tall. When I left the Navy, I was 175 lbs and considered myself to be in the best shape of my life. But one job led to another, one city to another, and I started fighting middle-age "spread".
Then, I received an invitation to my High School Reunion! I decided that I did not want to waddle into that affair looking like the Pillsbury Doughboy.
My wife, Sheila, suggested that I look at the 5+1 Program if I was really committed. I could not believe how quick and easy it was! I lost 37 lbs in less than 60 days. And I've never looked back; I'm still at my goal weight more than a year later. BTW, I was voted "most improved" at the reunion!
